Whitebait Fritters 1

Mokau River Whitebait Fritters


For those who want to cook Whitebait Fritters :

Recipe 1

1 egg
2 Tablespoons Flour
½ teaspoon Baking Powder
Pinch Salt
Whitebait
Milk or Water to mix

Put Flour, Baking Powder and salt into a mixing bowl. Add egg, Mokau River whitebait and enough milk or water to make a thick batter. Do not over mix as this will cause the fritters to be tough. Place spoon-full of batter into a hot pan and shallow fry until golden brown.

 

Recipe 2

2 eggs
2 Tablespoon Flour
½ teaspoon Baking Powder
Pinch Salt
Chopped Parsley    Dash Pepper
Whitebait
1 Tablespoon Milk

Put Egg yokes, milk, parsley, salt and pepper into a mixing bowl. Mix together. Add the Baking Powder and flour to this mixture, fold in. Whisk the egg whites until stiff. Fold the first mixture and Mokau River whitebait into the egg whites.
Melt butter in a pan and when hot drop in spoon-full of mixture. Turn when brown.   

 

 

Pukekahu - Mokau Beacon Hill

On the South side of the Mokau River raises a hill of conical shape, some 500 feet high, its name “Pukekahu”. It was used as a beacon, a bale-fire was lit which denoted the coming of hostile forced from the north and, gave warning to many a pa, to be alert, as far south as Pukearute.
